| Ingredients: |

4 fillets of Sea Bass (we prefer the whole fish after prepared to be filleted)
4 fresh Garlic finely diced
50ml lemon (squeezed)
25ml white wine
1 onion (finely diced)
50ml Olive oil
Salt
Pepper |

Preparation:
- Rinse the sea bass fillets or whole - pat dry and score several times on the skin side of the fish. Place the sea bass fillets on a flat oven tray, skin side up and spoon over a generous amount of the lemon oil mixture.

- Place the finely diced onion, the garlic, the wine and the juice of one lemon in pan and add a good long pour of olive oil and blitz for about a minute until the ingredients have mixed well together now place to one side.

- Cook Sea Bass for five minutes then carefully turn the fish over, make sure remains of water from the fish is removed from the tray.

- Check the fish is properly cooked, add the mixture of ingredients over the fish and finished in the oven for a minute or two. Serve immediately with your choice of potato and vegetables or salad. Sautéed potatoes and Mediterranean vegetables such as peppers, red onions and courgettes suit this dish well
