| Ingredients: |

1 lb Small or Supreme, fresh scallops
1/2 Lemon - juice of
1/4 c salted butter
1 t Olive Oil
1 lg Garlic clove - peeled & finely chopped
1 t Finely chopped chillies
1 t Finely chopped basil or chives |
| Method: |
- Rinse scallops under running cold water. Drain and toss with Olive Oil.

- In medium heavy skillet, heat butter until sizzling. Add scallops, garlic and Lemon Juice; cook briefly for 1 to 2 minutes, turning scallops over once with tongs.

- Placed the scallops on the serving dishes keeping them warm. Add the chopped garlic, chilli to the butter 4. Spread the butter to the scallops, along and evenly.

- Sprinkle with chives or basil, serve at once.
